The pizza-counter pasta tray — three cheeses, no fuss, feeds a crowd
Ingredients
- 2 lbs ziti, uncooked
- 2 lbs ricotta cheese
- 3 oz grated Romano cheese
- 3 cups garlic & onion tomato sauce (any brand), ¼ cup reserved
- ½ tsp black pepper
- 1½ lbs shredded mozzarella cheese
Directions
- Cook the ziti according to package directions, 12–14 minutes until al dente, stirring often. Drain well but do not rinse.
- While the ziti cooks, preheat the oven to 350°F. Combine the ricotta, Romano, tomato sauce (minus the reserved ¼ cup), and pepper in a large mixing bowl.
- Gently fold the cooked ziti into the cheese-sauce mixture. Spread the reserved ¼ cup sauce in a 13x9x2-inch pan, add the ziti, and top with the mozzarella.
- Cover loosely with foil and bake until the mozzarella is fully melted, about 12–15 minutes. Serve with garlic bread and additional sauce.
Chef's Tips
Don't rinse the ziti after draining — the starch helps the sauce cling. Serve with garlic bread and extra sauce on the side.
