The freezer-aisle favorite — dense, buttery, with that signature hint of nutmeg

Ingredients

  • 1 stick unsalted butter, room temperature
  • ¾ cup sugar
  • 3 eggs
  • 1 cup cake flour
  • 2 Tbsp dry powdered milk
  • 1 Tbsp corn syrup
  • Juice of ½ small lemon
  • ¼ tsp salt
  • ½ tsp vanilla
  • ¼ tsp nutmeg
  • ½ tsp baking powder
  • ¼ tsp mace (optional)

Directions

  1. Cream the sugar and butter together until light and fluffy.
  2. Add the eggs one at a time, mixing well after each.
  3. Beat in the flour, powdered milk, and corn syrup, one at a time.
  4. Add the lemon juice, salt, vanilla, nutmeg, baking powder, and mace, and blend thoroughly.
  5. Pour into a greased loaf pan and bake at 325°F for 45 minutes, until a toothpick comes out clean.

  Chef's Tips

Powdered milk and corn syrup are the secret to the tight, moist crumb. Room-temperature butter creams best.
