Ingredients

  • 11 whole graham crackers (6 oz)
  • 1½ cups graham cracker crumbs
  • 1 cup (2 sticks) unsalted butter
  • 2½ cups confectioners’ sugar
  • ¾ cup smooth or chunky peanut butter
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 1¼ cups chocolate chips

Directions

  1. Line a 9x13-inch pan with the whole graham crackers.
  2. In a medium bowl, combine the graham cracker crumbs, butter, confectioners’ sugar, peanut butter, vanilla, and salt, stirring until smooth.
  3. Spread the mixture evenly over the graham crackers and chill for 1 hour.
  4. Melt the chocolate chips over low heat, stirring until smooth. Pour over the chilled peanut butter layer and spread evenly.
  5. Let the chocolate set, then cut into bars. Makes 24.

  Chef's Tips

They look very grown up cut and arranged on a plate, but the flavor appeals to children of all ages. Chill a full hour before topping with chocolate.
