Ingredients

  • 1 Tbsp olive oil
  • 1 Tbsp white wine vinegar
  • 1–1½ tsp finely chopped, peeled fresh ginger
  • ½ clove garlic, minced
  • 1 jalapeño, seeded and minced
  • Salt and pepper
  • ½ head green leaf lettuce, rinsed, dried, and roughly chopped
  • 1 red bell pepper, seeded and chopped
  • ½ yellow onion, very thinly sliced

Directions

  1. In a large bowl, whisk together the oil, vinegar, ginger, garlic, jalapeño, salt, and pepper.
  2. Add the remaining ingredients and toss to coat. Serve immediately.

  Chef's Tips

The ginger-jalapeño vinaigrette is the star — whisk it right in the serving bowl. Toss just before serving so the lettuce stays crisp.
