A bright, gingery salad to cool down a spicy feast
Ingredients
- 1 Tbsp olive oil
- 1 Tbsp white wine vinegar
- 1–1½ tsp finely chopped, peeled fresh ginger
- ½ clove garlic, minced
- 1 jalapeño, seeded and minced
- Salt and pepper
- ½ head green leaf lettuce, rinsed, dried, and roughly chopped
- 1 red bell pepper, seeded and chopped
- ½ yellow onion, very thinly sliced
Directions
- In a large bowl, whisk together the oil, vinegar, ginger, garlic, jalapeño, salt, and pepper.
- Add the remaining ingredients and toss to coat. Serve immediately.
Chef's Tips
The ginger-jalapeño vinaigrette is the star — whisk it right in the serving bowl. Toss just before serving so the lettuce stays crisp.
