Pizza for breakfast — a crispy hash brown crust loaded with eggs, ham, and cheddar

Ingredients

Crust

  • 4 cups frozen hash browns, thawed
  • 1 cup shredded sharp cheddar cheese
  • 1 Tbsp butter, melted
  • 1 egg
  • ¼ tsp sea salt
  • ¼ tsp black pepper

Topping

  • 5 eggs, whisked
  • ¾ cup diced ham
  • 1¼ cups shredded sharp cheddar cheese, divided
  • ¼ tsp black pepper
  • 2 green onions, thinly sliced

Directions

  1. Preheat the oven to 400°F and line a large baking sheet with parchment paper.
  2. In a large bowl, combine the hash browns, 1 cup cheese, melted butter, 1 egg, salt, and pepper.
  3. Transfer to the baking sheet and spread into a large oval about ¼–½ inch thick, forming a small wall around the edges.
  4. Bake 25–30 minutes, until the crust is golden brown.
  5. While the crust bakes, stir together the whisked eggs, ham, ½ cup of the cheese, and the pepper. Carefully pour onto the pre-baked crust.
  6. Bake 10 minutes, until the eggs are set. Top with the remaining cheese and bake 2–3 minutes more.
  7. Top with green onions and cracked black pepper. Let set 2–3 minutes before slicing into triangles or squares.

  Chef's Tips

Build a little wall around the edge of the hash brown crust so the eggs don't escape. Let it set a few minutes before slicing.
