Club soda and pancake mix make the light, crispy batter from the classic fish-and-chips chain
Ingredients
- 3 lbs fish fillets
- 2 cups all-purpose flour
- 3 cups pancake mix
- 3 cups club soda
- 1 Tbsp onion powder
- 1 Tbsp seasoned salt
Directions
- Dip the moistened fish pieces evenly but lightly in the flour. Dust off any excess and let the pieces air dry on waxed paper, about 5 minutes.
- Whip the pancake mix with the club soda to the consistency of buttermilk — pourable, but not too thin. Beat in the onion powder and seasoned salt.
- Dip the floured fillets into the batter and lower into 425°F oil in a heavy saucepan (use a thermometer). Brown about 4 minutes per side.
- As pieces finish, hold them on a cookie sheet in a 325°F oven until everything is fried.
Chef's Tips
The batter should pour like buttermilk — not too thin, not too thick. A meat thermometer in the oil keeps you honest at 425°F, and the low oven keeps the fried pieces crisp while you work in batches.
